White Chocolate and Vanilla Mousse with Mixed Berries

Put the chopped chocolate into a heat-proof bowl set over a pan of barely simmering water. Stir until melted and smooth. Remove from the heat and set aside to cool slightly.
Whisk the double cream until you have soft peaks. Fold in the vanilla extract and cooled melted white chocolate until combined.
Set out 4 small glasses.
Divide the white chocolate cream mix equally between the glasses. Cover and chill in the fridge for at least 2 hours.
When ready to serve, sprinkle with fresh berries (see tip).
Serve straight away.
